You will create a bespoke strategy & execution plan using the Mise Mode™ framework to deliver on your North Star & become the stand-out multi-unit leader you want to be.

Project Outcome 1:

You will explore & define your personal & professional North Star, so that you can drive your progression from day 1.

Project Outcome 2:

You will use the Flawless Execution Framework to a) determine your sales forecast & b) define the right staffing levels & priorities to deliver on your sales forecast.

Project Outcome 3:

You will use the District Average Framework to calculate & manage your COGS.

Project Outcome 4:

You will craft your plan for bi-weekly scheduling, daily routines on-site, and commit to a renewed approach to your personal time management in order to deliver the results you seek - for yourself and for the business.

I have had a long career in the restaurant industry spanning 47 years (yikes!) working for many well-known concepts: Pizza Hut, Cosi, Chop’t Creative Salad Co., Le Pain Quotidien, Paris Baguette and Gregory's Coffee. These days, I am a full-time consultant with 3 restaurants of my own.


From Dishwashing to COO, and holding several senior leadership roles overseeing F & B, Supply Chain & Logistics, and Restaurant Operations, I know exactly what it takes to make leaders stand out and excel in a high-volume, multi-unit environment.


I am here to share everything I know to make you the best Operator you can be.

You will explore & define your personal & professional North Star, so that you can set your targets & drive your progression from day 1.

Next, you’ll optimize your skills & tactics for impact

Skills & tactics matter. Using expert insights you will: 

  • create a projected sales forecast for your business; 
  • determine the right staffing levels & priorities to deliver on your sales forecast.
  • calculate your theoretical COGS & create a tool for ongoing COGS MGMT.
  • craft & implement your personal schedule and on-site routine to ensure success.

Now, it’s time to drive growth

A plan means nothing without the ability to take your people with you.

You will master the art of communication & coaching to drive growth, deliver on your targets & hit your North Star.

Course schedule

2-4 hours per week
  • Mondays & Thursdays

    2:00-3:00pm EST

    Sync up with your coaches and classmates 2X a week for 3 weeks for 1-hour modules.

    Async time depends on you and your drive to succeed. Recommended time commitment is 1-3 additional hours per week.

    Yep, it happens. Don't worry. We got you

    Each coaching module will be recorded, so don't worry if you miss a class or two. But really try to attend in person - the magic of these classes is building your network, so take advantage of these rare moments to deepen relationships and up your Ops game.
